23 Jul Chef TJ’s Ashe Co. Cheddar Pimento Cheese
This recipe is one of our all time favorites! Grilled pimento cheese
with fresh sliced tomato just reminds us of childhood in the South. Whip
this easy recipe together and spread it on some sunflower bread. Top
with fresh avocado, sliced heirloom tomatoes, or even sliced Granny
Smith Apples and upgrade this classic into a flavor bomb.
1 lb. good sharp cheddar cheese (we use Ashe County Cheddar)
1/4 yellow onion
1/4 jalapeno (seeded and finely chopped)
3 Tbsp. pimento (drained)
1/3-1/2 cup Duke’s mayonnaise
1 Tbsp. Frank’s hot sauce
pinch of pepper
Using a four or three sided grater, grate cheese on the large holed
side into a mixing bowl. Grate the onion on the micro plane side of
the grater into the bowl (micro plane is the smallest side, used for zesting, feels rough to the touch).
Add pimentos, jalapeno, hot sauce, mayonnaise and pepper; Mixing thoroughly until the cheese starts to get creamy.
Chill for about 30 minutes, the cheese will soak up some of the mayonnaise.
Need an appetizer? Place in a bowl with some fresh pimentos on top
and serve with a fresh baguette. Yummy!
